Spicy Capsicum Rice
Ghee/oil:-2 tbsp
Mustard Seeds:-1/2 tsp
Capsicums/Bell:-Red,green yellow,orange thinly sliced.

Grated Coconut:-1 tbsp
Roasted peanuts:-2 tbsp

Coriander seeds:-1 tbsp
Cumin Seeds:-1/2 tsp
Urad dal :-2 tsp
Cumin Seeds:-1/2 tsp
Urad dal :-2 tsp
Curry leaves:-1 sprig
1” Cinnamon stick
METHOD:- Heat little ghee and add urad dal and fry till brown.Add corinader seeds,red chillies,cumin,curry leaves,peanuts,cinnamon stick and roast a while and grind to a fine powder once cooled.
- Heat ghee and add mustard seeds and let them splutter.
- Add the sliced capsicums and fry them for few min. Don’t over cook them.They should be crunchy.Add salt to taste and combine well.
- Add grated coconut and spice powder and mix well.
- Add the cooked rice and combine well.
- Serve hot with any gravy or raitha.
