Eggless Strawberry Cake

Ingredients:
AllPurpose Flour:-2 cups
Strawberries:-3
Baking Powder:-1 tsp
Sugar:-1 cup
Milk:-1/4 cup
Softened Butter:-3 tbsp
Nuts:-to garnishMETHOD:
  • Blend the strawberries and get the puree.
  • Add flour,sugar,baking powder,strawberry puree,milk to softened butter and mix well to smooth batter.
  • Grease a cake pan with butter and spread the batter.
  • Add chopped nuts on top of batter.
  • Preheat the oven at 375 and bake the cake mix for 20 min or until done.
  • Dip in tooth pick and see if it comes out clean.If clean, then the cake is baked.
  • Cut and serve.

Spicy Capsicum Rice

Ingredients:
Cooked rice:-3

Ghee/oil:-2 tbsp
Mustard Seeds:-1/2 tsp
Capsicums/Bell:-Red,green yellow,orange thinly sliced.
Salt:-as per taste
Grated Coconut:-1 tbsp
Roasted peanuts:-2 tbsp
Dry red chillis:-3
Coriander seeds:-1 tbsp
Cumin Seeds:-1/2 tsp
Urad dal :-2 tsp
Curry leaves:-1 sprig
1” Cinnamon stick
METHOD:
  • Heat little ghee and add urad dal and fry till brown.Add corinader seeds,red chillies,cumin,curry leaves,peanuts,cinnamon stick and roast a while and grind to a fine powder once cooled.
  • Heat ghee and add mustard seeds and let them splutter.
  • Add the sliced capsicums and fry them for few min. Don’t over cook them.They should be crunchy.Add salt to taste and combine well.
  • Add grated coconut and spice powder and mix well.
  • Add the cooked rice and combine well.
  • Serve hot with any gravy or raitha.

Chocolate Walnut Muffins

The word cake brings me back my childhood days where my mom used to bake it with help of cooker and sand.Though its preparation is a vague memory,i remembered it gulping it down eagerly to eat as much as possible.Such was the wonderful taste of it.
Gone are those conventional methods to bake a cake once oven came into picture.Back in india,though baking a cake in oven is a bit rare in household as many dont possess an oven, But here in US,baking cake is a very common sight.Here mom's make cakes for all occasions.
I had few leftover chocolate cubes and some maida.So i jus tried this simple cake recipe which turned out to be very yummy.

Ingredients:
All-purpose flour/Maida:-1 cup
Powdered sugar:-1 cup
Hersheys milk choclates:-5 cubes.
Walnuts:-1/2 cup
Baking powder:-1/2 tsp
Eggs:-2
Milk:-1/2 cup
Ghee:-1 tbsp
METHOD:

  • Pre heat oven at 250.
  • Beat egg and whisk it well.
  • Add chocolate to milk and microwave it for 3 min.
  • Disslove sugar in egg mixture and mix the flour,baking powder,chocolate milk.
  • Grease a baking tray with ghee and pour in the cake mixture and spread evenly or use a muffin pan.
  • Break walnuts into small pieces and sprinkle on top or mix in the cake mixture.
  • Bake it for 20-25 min or until done using the toothpick test.
  • Cut into pieces and serve.

TIP:Toothpick test is the test to know if the cake is completely baked or not.Take a toothpick or knife and dip it in cake.If it comes out clean without sticking,then the cake is baked well.
