Nuvvula guttonkaya/Seaseme Brinjal curry
Ingredients:
Small brinjals:-5
Peanuts:-3 tbsp
Seseme seeds:-4 tbsp
Jeera:-1/2 tsp
Curry leaves:-1 sprig
Coriander powder:-1 tbsp
Onions:-2
Salt and chilli powder:- as per taste
Turmeric powder:-1/2 tsp
Oil:-4 tbsp
Coriander:- to garnish
METHOD:
- Wash and cut brinjals in quarters with head intact.
- Dry roast peanuts and seaseme seeds and grind to powder.
- Grind onions and set aside.
- Heat oil in a kadai and add jeera and let them splutter.
- Add brinjals and close the lid and let them fry in sim for 5 min.Mix in between.
- Add onion paste,turmeric powder,salt and mix well.
- Add 2 cups of water and let brinjals cook in sim.
- Add coriander powder,chilli powder,ground peanut powder and mix well.
- Let it cook till the consistency u need and add chopped coriander.
- Garnish and serve with rice.
