Idly Fry / Idly snack

Ingredients:

Leftover idlis:-3
Salt and chilli powder:-as per taste
Oil:- enough to deep fry
METHOD:

  • Cut the leftover idlis into cubes.
  • Heat oil in a kadai and fry the idli cubes till golden brown.
  • Drain excess oil on paper towel and sprinkle salt and chilli powder.
  • Serve hot with ketchup.

Gobhi Matar Kurma / Cauliflower kurma

Ingredients:
Gobhi/Cauliflower florest:-1 cup
Green peas:-1/2 cup
Onion:-1 big
Tomato:-1 big
Curry leaves:-2 sprigs
Coriander powder:-1 tsp
Turmeric powder:-1/4 tsp
Salt and chilli powder:- as per taste
Cashews:-3 tbsp
Olive oil:-3 tbsp
Ginger Garlic paste:-1 tsp
Grated coconut:-2 tbsp
Jeera:-1/2 tsp
METHOD:
  • Clean and wash florets and peas.Blanch them for few min and set aside.They must be semi cooked.
  • Soak cashews in warm water and grind along with coconut to smooth paste.
  • Grind chopped onion and tomato seperately to smooth purees and set aside.
  • Heat oil in a kadai and add jeera and curry leaves and let them splutter.
  • Add ground onion and fry till raw smell is off.
  • Add GG paste and fry a while.
  • Add the tomato puree and cook a while.
  • Add the semi cooked gobhi and peas and add salt,turmeric and mix well and close lid and cook on slow flame.
  • Cook till gobhi is cooked well and oil starts oozing out.
  • Add chilli powder,coriander powder,cashew paste and little water and mix well and cook on slow flame till curry comes together.
  • Garnish with curry leaves and coriander leaves and serve hot.
