Milk Powder Gulab Jamuns

Ingredients:

Milk Powder/Dry Milk:-1 cup
Baking powder:-1 pinch
Maida/All Purpose Flour:-3 tbsp
Oil:-to deep fry
Sugar:-1 cup
METHOD:
  • Mix maida,baking powder,milk powder well and make a smooth dough with water.
  • Let it rest for 10 min and make small smooth rounds out of it without cracks.
  • Add suagr and little water enough to cover sugar and heat it till 1 string consistency.
  • Heat oil in a deep kadai and fry jamuns on low flame till golden brown.
  • Add the fried jamuns to sugar syrup and let them sit till well soaked with syrup.
  • Serve warm.

TIP: Fry jamuns on low flame else the inside wont be cooked.

Chepala Pulusu/Fish in tangy sauce

Ingredients:

Tilapia Slices:-1 lb
Chopped onions:-1 cup
GG Paste:-2 tbsp
Coriander Powder:-1 tbsp
Cumin Powder:-1/2 tbsp
Curry leaves:-2 springs
Chopped mint and coriander:-2 tbsp each
Salt:-as per taste
Turmeric Powder:-1/2 tsp
Chilli powder:-3 tbsp
Tamarind:-1 lemon sized ball
Green chillies:-3
Olive oil:-4 tbsp
whole Cloves:-4
Lemon juice:-1 tbsp
Whole cinnamon:-small pieces
METHOD:
  • Wash fish pieces well and marinate them in salt,lime juice,turmeric powder,little gg paste and set aside.
  • Drizzle 1 tbsp of oil on a non stick pan and roast fish pieces a little and set aside.
  • Heat remaining oil in a pan and add whole cloves,cinnamon and green chillies.
  • Add chopped onions and fry till pink.
  • Add gg paste and fry till raw smell is off
  • Add coriander powder,cumin powder,salt,chilli powder,some chopped coriander and mint and fry a while.
  • Squeeze juice out of tamarind and add the juice.
  • Add water and adjust salt and spice and let it boil.
  • Add fish pieces gently and simmer for 10 min.
  • Add chopped curryleaves,mint,coriander and cook till flavours blend well.
  • Serve hot with rice.

TIP:Roasting fish pieces ahead helps the fish to stay intact in sauce.

Vegetable Oothappam

Ingredients:

Dosa Batter:-2 cups
Chopped onion:-3 tbsp
Grated Carrot:-3 tbsp
Chopped coriander:-1 tbsp
Oil:-2 tbsp
METHOD:
  • Spread a ladle full of batter into a thick ootappam.
  • Drizzle oil along edges and add the chopped onion,carrot,coriander on top and cover with a lid and let it cook on sim.
  • Flip over and let the onions roast a bit.
  • Serve hot with peanut chutney.

TIP:u can add other veggies of ur choice like sliced tomatoes,chopped cucumbers,grated ginger,curry leaves etc.Also u can sprinkle a touch of pepper and salt for a different flavour.

Coconut Cake

Ingredients:
Maida/All purpose flour:-1 cup
Egg:-1
Coconut Milk:-1/4 cup
Coconut Powder:-1/4 cup
Sugar:-3/4 cup
Baking powder:-1/4 tsp
Butter:-1/4 cup
METHOD:
  • Sift flour,baking powder together and mix sugar and coconut powder well.
  • Add softened butter,egg and coconut milk and fold in everything without lumps.
  • Grease the baking tray with little butter and add the cake mix.
  • Preheat the oven at 375F and bake the cake for nearly 25-30 min.
  • Cool the cake on wire rack and serve warm.

Fish Roast

Ingredients:
Tilapia Fish slices:-1/2 lb
GG Paste:-1/2 tsp
Cumin Powder:-1/2 tsp
Coriander Powder:-1/2 tsp
Chilli powder:-1/2 tsp
Turmeric powder:-1 pinch
Salt:-as per taste
Lime juice:-1/2 tsp
Oil:-2 tbsp
METHOD:

  • Make a paste using all ingredients except fish,oil and chilli powder.
  • Rub the mix to fish and let it marinate for an hour.
  • Heat a non-stick pan and drizzle oil and roast the fish on both sides.
  • Once fish is well roasted,sprinkle chilli powder and fry again.
  • Serve hot.

Dry fruit Laddoo

Ingredients:
Almonds:-1/4 cup
Cashews:-1/4 cup
Pistachios:-1/4 cup
Walnuts:-1/4 cup
Pitted dates:-1/2 cup
Honey:-2 tbsp
Coconut Powder:-1/4 cup
Ghee:-1 tbsp
METHOD:
  • Chop all nuts roughly and toast a bit and set aside.
  • Dry roast coconut powder and set aside.
  • Heat ghee in a pan and add all ingredients except honey.
  • Heat till dates soften a bit and everything stick together.
  • Add honey and mix everything.
  • When warm make laddoos and store in air tight container.

TIP:u can add roasted khus khus/poppy seeds to laddoo.
