Orange cake with Orange frosting




Ingredients:

All Purpose flour:-1/2 cup
Baking powder:-1/2 tsp
Baking soda:- a pinch
Salt:- a pinch
Orange extract:-1/2 tsp
Orange zest:-1 tbsp
Canola Oil/softened butter:-1/4 cup
Egg:-1

Frosting:
Whipped topping:-1/2 cup
Orange juice:-3 tbsp
Orange extract:-1/2 tsp
Vanilla instant pudding mix:-3 tbsp
Milk:-4 tbsp

METHOD:
  • Mix all dry ingredients and set aside.
  • Beat egg n sugar together till fluffy and add all wet ingredients.
  • Fold in dry ingredients into wet and mix gently.
  • Bake the batter in preheated oven(350F) for 35-40 min.
  • Cool the cake on wire rack completely before applying the frosting.
FROSTING:
  • Mix the pudding with cold milk and gently mix injuice, whipped topping and extract.
  • Spread on cake and serve..

chicken bean pasta Soup




Ingredients:

Boneless chicken breast pieces:- 1/4 cup
Black eyed beans:-soaked and boiled :-2 tbsp
Pasta:-1/4 cup
Celery julienned :-2 tbsp
Onion julienned :-2 tbsp
Oregano:-1/2 tsp
Pepper and salt:- as per taste
Chicken stock:-1 cup
Butter:-1 tbsp
Chopped coriander:-to garnish

METHOD:
  • Cook chicken in little water and shred it and set aside.
  • Cook pasta as per package directions and set aside.
  • Heat butter in a kadai and fry onions and celery.
  • Add chicken stock and bring to light boil.
  • Add salt,pepper,oregano,cooked chicken,pastaand beans and mix well.
  • Let it simmer for 5 min and garnish with chopped coriander and serve hot.

Chocolate halwa/Burfi


Ingredients:

All purpose flour:-1 cup
Sugar:-2 cups
Milk Powder:-1/2 cup
Cocoa Powder:-3 tbsp
Ghee:-3 tbsp
Warm Milk:-1/2 cup

METHOD:
  • Heat ghee in a kadai and add all purpose flour and fry till nice aroma emanates.
  • Set aside and add milk powder and mix well.
  • Add cocoa in the warm milk and set aside.
  • Add ½ cup water to the sugar and boil it till it reaches soft ball consistency.
  • Add maida mix little by little and mix well.
  • Add the cocoa milk stir thoroughly.
  • Stir continuously till it become thick and leaves the sides of the vessel.
  • Put it in a greased plate and spread it. When it is warm,make roundals.

    Cashew chicken


    Ingredients:

    Boneless chicken:-1 lb
    Chopped onion:- 1 cup
    Chopped tomato:-1 cup
    Cashews:-fistful
    Garam masala:-1 tsp
    Coriander powder:-1 tbsp
    Salt n chilli powder:- as per taste
    GG paste:-2 tbsp
    Turmeric powder:- 1 tsp
    Lime juice:- 1 tbsp
    Oil:- 3 tbsp
    Butter:-1 tbsp
    Curryleaves:- 2 sprigs
    Coriander leaves:- to garnish
    Green chillies slit:-3
    METHOD:
    • Cut and marinate chicken with salt,chilli powder,turmeric and lime juice,prefarably overnight.
    • Heat oil in kadai and add chopped onion and fry till pink.
    • Add curry leaves,green chilli,GG paste and fry well.
    • Soak cashews in hot water for 1 hr and grind to smooth paste and set aside.
    • add chicken and fry till chicken is cooked.
    • Add chopped tomato and cook covered till most of the moisture evaporates and curry comes together.
    • Add cashew paste and adjust salt and chilli powder and little water if necessary.
    • More water can be added according to desired consistency.
    • Add the spice powders and mix well.
    • Garnish with chopped coriander,curryleaves and green chillies.
    • Serve hot.
