Eggless caramel fruit cake




Ingredients:-

All purpose flour:-1 cup
Sugar:-1/2 cup+1/4 cup
Orange marmalade :-2 tbsp
Baking powder:- 1 tsp
Dry fruits mix:-  1 cup( I used dates,tutty fruity,walnuts,cashews,almonds,raisins)
Vanilla essence:-1 tsp
Orange juice:-3/4 cup

Method:-

Sift flour with baking powder and set aside.
Heat 1/2 cup sugar with 1 tbsp water and heat till it turns to amber color liquid.
Add 1/4 cup boiling water into it and swirl quickly to form caramel sauce.
( u have to be extremely cautious as adding water into hot liquid can splash and cause burns..add thick mitts and be carefull while adding water)
Mix nuts,marmalade ,1/4 cup sugar,orange juice,vanilla essence and fold flour little by little.
Batter will be very thick and set the batter in a greased baking dish.
Bake it in preheated oven at 375f for 35-40 min.
Cool and serve warm.
Cake would be dense due to the dry fruits....

I made a fruit cake similar except that I added eggs. It was good !

I am always on a lookout for eggless cake recipes as I have a lot of friends who are vegetarian. When I invite them over, I bake eggless cakes. Loved this recipe!
