No flour No sugar Gluten free cake /Almond cake



From the title,u must have got a little glimpse of the main ingredient...yes,Almonds..Homemade almond flour to be more precise..The best part of this recipe is that no flour or sugar is used and very minimal ingredients...Doesn't that sound cool enough...
when I first read about this Jewish dessert,I was little skeptical as of how the end product would be without any flour..To be frank,,I was little tempted to add some all purpose flour but NO....Do follow the recipe to the dot and u will be awarded with amazing results....Honey lends the subtle sweet taste and i didnt blanch the almonds and used with skin.
Some of my frnds are yet to believe that it is flour less ....so give it a shot to believe and u won't be disappointed...A guilt free ,Gluten free ,super yummy recipe...



Ingredients:-

Whole almonds:-1 cup
Baking soda:-1/2 tsp
Honey:-1/4 cup or more according to taste
Eggs:-2
Canola oil:-1/4 cup
Vanilla extract,chocolate chips,cinnamon powder are all optional and can be added according to taste..I added chocolate chips..



Method:-

1) Roast the almonds lightly and let them cool a bit and grind to fine powder.Mix baking powder well and set aside.
2) Beat eggs well and mix in honey and oil and fold in dry mix.
3) Bake in preheated oven @ 350f for 25 to 30 min until toothpick pricked in center comes out clean.
4) Let it cool and slice and serve..

A cake without flour? But the rest of the ingredients are rich and I am sure the cake would have had been delicious.
